Cut potatoes, to desired slice size + shape. Try to be consistent. Put in bowl of water to rinse off surface starches.
Preheat deep fryer/large pot filled withWagyu Beef Tallowto about 350°.
Work in small batches and fry until golden crispy on outside, creamy fluffy on inside. Remove from fryer, shake off excess oil.
Season well with coarse salt. Enjoy while hot.
Tip: If you are holding them, don’t let them steam onto themselves, instead, place in a single layer on a paper plate with paper towel/a perforated sheet pan.
